Canning mess up

Hello all, well this is what happen...

I wanted to soak my peppers in vinegar ,salt, produce protector for a day or so in the fridge. so i cold packed it in mason jars until the weekend "when i thought i could get the time" to make into hot sauce, "no heating of liquid yet". anyways i had an emergency trip i had to take and now they been in the fridge for a month and a few days.

Anyways my question is it still safe to use in making my hot sauce or should i ditch it and start over?

Hate to ditch them but if i have to i have to. Peppers came off my Jolokia plant.
