When to plant out seedlings in NJ (edison)? Leaving on Business.

I have just found out that I may be leaving on April 30 for 2 weeks. I have 3 trays of flower seedlings and vegetables. ANd I do not know what to do?!

When should I plant them out in Edison? Don't they need a 2 week hardening off period?

Also evil man eating rabbits have a tendency to chew off my seedlings. If I plant them in the ground, when I come back they may be all gone. And there might not be anyone to water my entire garden after planting.

I can get someone to water my 3 trays though (thats quicker than a garden). Should I keep them in trays? Will they get too big (1 month 2 weeks). The vegetables are all already pretty big, the flower seedling tiny. Should I plant the veggies early and mulch?

I really am confused, any advice would help.
