JM in pots lose leaves in summer

I have two Japanes Maples in pots (they have to stay in pots because of some local zoning issues I wont go into here.) One has large red leaves, the other has small green leaves. They are 10-12 years old and seemingly healthy. I have not pruned them because I dont know how. Anyway, every summer, their leaves curl up and fall off. It gets quite windy here, although it does not get about 70 or 75 degrees and is often foggy in the summer. I try watering daily, especially watering the leaves and trunk, but by late summer, it happens every year. What should I do, and should I be fertilizing and how? Im sure they are root bound but transplaning would be way too much for me. Thanks so much for your help!
