Hosta going back to all green

I have one of the variegated hostas. I don't really know the name but everyone I know seems to have one. I think it may be the mediovariegata from looking at Lowe's but I can't be sure.

Anyway, part of my plant has went from variegated to all green leaves in spots. I asked about it a few years ago and someone said it probably had some sort of damage done to it that caused it. I believe DH did sit the ladder on it at some point.

I want to remove the green leaves and start just an all green plant. How would you go about that if it were you? Should I dig up the whole thing and try to seperate the parts and go from there? I think that's what I did before but I don't know if it's the "right" way.
