Lemon Balm tastes like Pledge

I started two lemon balm plants in pots last summer. They grew lush and bushy outdoors, then I had to bring them in for about three weeks (!) thanks to a marauding cat that was pooping in my plants. I solved the cat problem, put the balms back outdoors, and trimmed the spindly growth off.

They are bushing up now, but taste like lemon Pledge! Do older lemon balm plants lose flavor over time? These used to taste like lemon drops and made wonderful tea.

I also noticed that the pot's attached drip trays were retaining water and the plants were sour and waterlogged. Is that the off-flavor problem and will they start tasting sweet again anytime soon? I am willing to toss them and start again with fresh plants if needed.
