Need help ID'ing tuber from pic

Hi, I wasn't sure where else to post this, but probably here is best considering you guys are familiar with tubers. As you probably guessed, this is not a dahlia tuber, it's a cosmos atrosanguineus (chocolate cosmos) tuber. I've heard they are similar to dahlia tubers. I'm familiar with bulbs, but not tubers.

Can someone help me identify the parts that are circled in different colors? What part is the actual tuber? My guess is the part circled in red, unless that's just a thick root? The clump circled in green looks more tuber shaped, but they are very small. Perhaps young forming tubers? I'm guessing the eyes are circled in yellow? So how many tubers do I actually have here?

Dahlias are my favorite flowers and I plan to grow them one day, so it's probably a good idea for me to learn something about tubers. :) Any help would be greatly appreciated.
