Thursday...and I'm making blueberry muffins for tea :)

I love Thursdays! I drink tea everyday, but Thursday is special.

Most Thursdays, I try to have tea somewhere in the garden (if the weather is nice) but today, I'm going to my mom's for tea. She loves blueberry muffins, so I'm making those this afternoon. They're so good with fresh blueberries and they've got orange juice and oatmeal in them...very healthy!

I'll be thinking of you all enjoying your tea this afternoon while I'm sitting in the dentist's chair. That time of the year again, Oh well, I bet I could be in the running for 'The Cleanest Mouth of the Day Award' if there was one :).

I'll trade you a muffin for some grapes and cheese? Say hello to mom from me. Don't mention dentist to me!! My worst fear ever since a child. My teeth can prove it. :)

It's hot today but not here under an old apple tree in the orchard. I had been deadheading Phlox and trimming ivy for a couple of hours, decided to take my tea break early just after 12noon. I nearly dozed off with the sound of birds and a light breeze blowing.

Here is the little bistro table I re-painted. Did lavenderlass ask about the color? It is "Oliver Green", and so called because I bought the spray can at the local RKO and it is a farm machinery paint. Can you guess what the "Oliver" is? I thought this would be a tough paint and work very well for this little table that has sat out from May until October for many years.

The matching folding chairs have (or had) seats and backs of wooden slats, this year my big..um..rear broke right through the old slats! I hope to repair them someday, meanwhile I found these bronze metal arm chairs for only $26 each also at RKO several weeks ago. They are surprisingly comfortable. Original intention was to paint them the same green, but the bronze isn't that bad and blends in quite nicely with the trees.

1. They are all quick breads which require low-gluten flour/s and little mixing. They all depend on the fat to shorten the gluten strands. 2. Scones vary widely in texture, shape, size, and flavor. They can vary from (soft) cookielike to cakelike in texture and from savory to sweet in flavor. Making them is similar to making biscuits. Scones can be rolled, shaped, or dropped, but the mixing method is about the same. Scones contain eggs as well as milk or cream, which makes them richer than biscuits. They may also contain pieces of dried fruits, unlike biscuits. a. Mix the dry ingredients together. b. Cut the chilled butter into the dry ingredients - this is done to shorten the gluten in the flour. Everywhere the butter coats the flour, the liquid will not be able to be absorbed by the flour, thus making short, or shortening, the strands of gluten. If the fat is cold and the mixture resembles a coarse meal, this will contribute to a flaky texture. c. Mix the liquid ingredients together (beat the egg lightly and add the milk/cream) and any other liquid ingredients, and add all at once to the dry ingredients, then stir to combine. Some recipes call for a little kneading to help develop the gluten, but avoid overkneading the dough because this will produce a tough scone. d. Judge the recipe... A high butter or sugar content in the dough will help inhibit the formation of gluten and produce a more tender product. 3. BISCUITS also rely on the fat for shortening the gluten formation. The method of mixing is similar to scones. There is less liquid in biscuits than most scones and biscuit dough usually requires a little kneading to develop the gluten because of the lack of liquid. a. The dough is then rolled. A thickness of 1/4-inch for plain biscuits, 1/2 inch or less for tea biscuits, and 1 inch or more for shortcake. Then it is cut into rounds or squares. b. Drop biscuits have more liquid than cut biscuits. 4. MUFFINS - The ratio of liquid to flour is higher than either scones or biscuits. The batter needs to be placed in a pan that forms the muffin, unlike scones/biscuits which will hold their shape once free formed or cut to form. a. There are two types of mixing methods for muffins. b. Traditional muffin-making: all the steps are geared to minimize mixing, and therefore gluten formation in the flour. The fat is most often in liquid form, either melted shortening or an oil. It's usually mixed with eggs and the liquids, then added all at once to the dry ingredients. Since fat affects tenderness, muffins with a high fat content not only taste rich, they also have a soft crumb. c. Stir muffin batter only until the dry ingredients are lightly moistened (NO ELECTRIC MIXERS PLEASE, or you'll end up with tunnels inside from overmixing). The batter SHOULD be lumpy as it's spooned into the muffin pans - even to the point some bits of dry ingredients are still remaining in the batter. d. Muffins made by creaming fat and sugar will be more tender, but they are also more cakelike. This is the second mixing method. -Grainlady

Tami, I can vouch for Ann T's blueberry muffins, I just love the darned things. I've never tried them with splenda, but I've subbed half whole wheat pastry flour with OK results. Not as good as the originals, of course, but still not bad. This is a nice tea bread, I got the recipe from Roselin on the recipe forum: Blueberry Tea Bread (Roselin) 1 beaten egg 2/3c sugar 1 1/2c sifted cake flour 2 tsp baking powder 1/2 tsp cinnamon 3/4 tsp salt 1/3c milk 3T melted butter 1 tsp vanilla 1c fresh or frozen blueberries 2T sugar Preheat oven to 400°. Grease a 1 1/2 quart baking dish. Beat egg and gradually add 2/3c sugar. Sift together flour, baking powder, cinnamon, and salt. Add to sugar mix alternately with milk. Beat well and add butter & vanilla. Fold in blueberries. Pour into baking dish. Sprinkle with 2T sugar. Bake 25 minutes or til tests done. I like these too, and I think they would translate nicely into something with Splenda and some whole grain flour: Farmgirl's Blueberry Breakfast Bars Makes 12 to 16 large bars Bottom Layer 2 cups old-fashioned oats 3/4 cup all-purpose flour 3/4 cup (packed) light brown sugar 1/4 teaspoon baking soda 1/4 teaspoon salt 10 Tablespoons (1 stick + 2 Tbsp/5 ounces) butter, melted 1 teaspoon pure vanilla extract Top Layer 1 cup all-purpose flour 1/2 cup (packed) light brown sugar 1/2 cup butter or natural vegetable oil sticks Middle Layer 3-1/2 cups fresh or frozen blueberries 1 teaspoon pure almond extract 3/4 cup granulated sugar 3 Tablespoons all-purpose flour 1/2 teaspoon nutmeg (1/4 tsp. if freshly ground) For the Bottom Layer: Heat the oven to 425 degrees F. Grease a 9" x 13" pan. In a large bowl, combine the oats, flour, brown sugar, baking soda, and salt. Stir in the melted butter and vanilla until thoroughly combined. Press this mixture evenly into the bottom of the pan with your fingers. (I also use the bottom of a stainless steel measuring cup to help make the crust flat and even.) For the Top Layer: Place the flour, brown sugar, and butter or vegetable oil sticks in a small bowl and use a fork, pastry blender, or your fingers to combine until the mixture resembles large crumbs (some pea-sized clumps are okay). Set aside. For the Middle Layer: Place the blueberries in the bowl you mixed the Bottom Layer in and toss them with the almond extract. Pour them evenly over the Bottom Layer in the pan. Combine the sugar and flour and sprinkle it evenly over the blueberries. (Even when wet or frozen, the sugar/flour mixture wouldn't stick to my big fat blueberries when I tried tossing it with them. If yours will, just toss the sugar/flour mixture with the blueberries and then pour the whole mixture over the Bottom Layer in the pan.) Sprinkle the Top Layer evenly over the blueberry mixture. Bake at 425 degrees F for 15 minutes, then lower the oven temperature to 350 degrees F and bake for another 20 to 25 minutes, until the top is golden, and the edges are starting to brown. Let cool in pan on a wire rack. Store in a cool place or refrigerate. Bars may also be frozen. Just Peachy Blueberry Breakfast Bars: Substitute 3 cups of small peach chunks (about 2 peaches, no need to peel them) and 2 cups of fresh or frozen blueberries for the 3-1/2 cups of blueberries. Toss the sugar and flour directly with the fruit before spreading it over the bottom layer. Bake at 425 degrees for 15 minutes, then lower the oven to 350 degrees and bake until topping looks "dry" but edges aren't too brown, about 30 to 40 minutes. Good luck, and stay healthy. Annie

I (and my family) have to say it again. These are the best muffins we have ever had. And that includes some "high end" gourmet ones that is sold here! I have made 4 batches in one week, and none lasted long enough to get completely cold. I have no problem with the topping, though I do press it into the muffin a bit before baking. I also cut the cinnamon down to a 1/2 teaspoon. I put paper muffin liners in my muffin pan, so no problem getting them out of the pan, and the fluted liners peel right off. Elisabeth

It's been pouring rain today so nothing doing outdoors here! I don't mind a day off from gardening and a break from the constant watering.

Your muffins sound wonderful LL. I'm sure you and your Mom had a great tea.

Very nice arrangement Schoolhouse - great job on the table. I'm still waiting to find a 'tea table' for outdoors at a yard sale.

Just for fun I quickly set up tea tray using a tea set recently purchased at a yard sale. I used the matching sugar bowl as a vase as there is no creamer so need to use a different cream and sugar anyhow. Everything except silver spoons are yard sale finds. My favorite shopping place!

Nice score on the tea set, and I adore doillies. I have a little crystal vase that I used to put a few blooms in to pretty up the tea tray, now that I see your flowers I might have to bring that vase back out for duty. Very pretty arrangement, what is the purple? Alysum?

Have you ever tried Lapsang Souchong tea? Twinings used to sell it in a purple tin, it has a smoky flavor that I find too exotic. That was long ago though, maybe I'll buy some and try again.

Schoolhouse- Grapes and cheese sound good. I like your new chairs with the table. I give up, what is the oliver for? Also, I love your bunny statue...where did you find it?

Luckygal- Beautiful tea set! My mom would love that, in fact, I'm taking a picture up to show her. Nice silver tray, too :)

Thanks Schoolhouse, the flowers are yarrow. Most of the ones I seeded are pinks and reds but they self-seed and this one is a bit toward lavender/mauve which is different.

I don't think I've ever tried Lapsang Souchong tea. I used to try many different kinds but mostly drink Earl Grey and mint now. I guess it's time I tried some different ones.

LL, I couldn't resist this tea set for 6 with plates for only $5 altho I certainly don't need more dishes! I have quite a few silver plated trays (this is one of the plainest ones) as I buy them whenever they are $5 or less. I use them every day for serving and they are useful for vignettes. Does your Mom go to yard sales?

The "Oliver" in the paint color "Oliver Green" stands for the make of a farm tractor called an Oliver. There are John Deeres, Fergusons and Olivers to name a few.

As far as the Lapsang Souchong tea, if I were you I'd buy a small pack of tea bags first instead of an entire tin. It really is an acquired taste. I just thought of it because of your oriental tea set.
