Improved Dwarf Meyer Lemon questions

Hi, everyone. I usually hang out at (in?) the Orchid Forum, but today I need some info about my Meyer Lemon tree. It is in the ground, coming up on it's 3rd year planting anniversary. I have a very nice crop that I'm harvesting but I also have a couple of questions.

1) My lemons are not the classic orange-yellow of Meyers, but rather a deep yellow. Does anyone know why? The fruit is also not as round as some but a more usual lemon shape.

2) If there are too many lemons to absorb and deal with at once, is it advisable to leave them on the tree, or pick and refrigerate them?

3) I have a lovely Meyer Lemon marmalade recipe that I'd be happy to share with anyone who wants it. Does anyone else have something in particular they like to do when their Meyers ripen all at the same time?
