privacy shrubs in Santa Cruz mountains

We live in the Santa Cruz mountains at 1200 ft. elevation. Sudden Oak Death is taking out a lot of our native tanoak, so we need to plant some medium height (6-10' high) shrubs for privacy. Want evergreen, deer tolerant, and able to survive on our wet winters, dry summers after established without irrigation.

We'd like them to be pretty fast growing up to the 6' height if possible.

Talking to a good local nursery, they mentioned Elaeagnum Angustifolia (Russian Olive), Carpenteria Californica, and Myrtus Communis as possible choices.

Any other good suggestions that we should look at?
