Jade Tree Pruning Help Needed

We have some very old and large jade trees growing in the back yard in Vista, CA (San Diego county) Evidently they have grown wild for decades. Now we want to cut them back and start shaping them.

They are about 8' high with several 10" to 12" trunks. There are many 6" trunks. All are as healthy as can be. They have not been fertilized, pruned or watered for 12 years that we know of.

1.) Can someone confirm the species? I only see online info for the Crassula argentea.

2. I read you should not prune the lateral branches back to the trunk. Is that true? We would like to clear the trunk up 2' to 3' from the ground to have a nice clean horizontal canopy. Can this be done? If so, what do we need to do to ensure they stay healthy?
