Composted Horse Manure as garden soil?

I live in Long Beach, CA and am in the process of switching 1/2 my front lawn to vegetable beds. The best local price for large amounts of compost delivered is a horse stable. They apparently use wood shavings as stall bedding and compost the manure and bedding together. They will deliver up to 10 yards for $75 + $12/yard. (Serrano Creek Ranch)

My plan was to build five 4'x 8' x 8" raised beds, line with newspaper to keep the lawn remnants from growing through, and fill them with the compost.

Would the composted horse manure be too rich to grow vegetables? I'm going to start out with winter squash, eggplant, cucumbers, and whatever other vegetable and ornamentals my wife suggests.
