a few questions from a gardening newbie

I've been gardening in Arizona for a short while and have had good luck. I was wondering if someone has a comment about several queries I have.

This year I tried tomatoes (yellow pear, Roma & Porter), they are still doing great but I wondering if I should trim them back. They are over 5' tall with limbs growing out of the cages by 2' or more.

Also, I have strawberries that I planted in the spring that are growing like crazy but I have gotten few strawberries. Will I get fruit when it cools down?

Last question, I have yellow crookneck squash that are good if picked VERY young, 3-6 inches, but get very bumpy and tough when they mature. Any ideas? I water using a drip system very deep every other evening.
