Questions from a newbie

I've been reading posts here and enjoying them very much. I have only two varieties of Bamboo so far, Bambusa vulgaris 'Wamin' - Dwarf Buddha Belly Bamboo and Bambusa eutuldoides viridi-vittata - Asian Lemon Bamboo. I bought them when searching for fast growing (but not too tall-hurricanes blow down the big ones) screening plants. We lost so many trees from the storms, that we desperately need some privacy back.

I have quickly learned to love Bamboo..

My main question is, do most of you "use" your bamboo, or grow it for beauty/screening alone?

I'm eyeing those lovely culms with thoughts of tree stakes, tomato cages, trellis building, etc. Does thinning a group of "canes" (wrong term?) make it ugly, or help them grow better? Is there a variety that is more useful than others? I wouldn't cut the Budda Belly for stakes, but the Asian Lemon has possibilities. Are some tougher than others-last longer after being cut-slower to rot? Bamboo stakes are quite expensive here.

Sorry if I've asked stupid questions, but Boo is an entirely "different" plant for me. Fruit trees have been my main interest.
