how will I know if they get too hot?

sorry to have all of these stupid questions, but I'm new at gardening anything....

I've got about 30% of my sown seeds germinating right now... I think I've set myself up for some hard times ahead as I've sown some late crops (melons & squash and tomatoes) apparently too early, and they're starting to go.

So, for the last few days, I've been putting the containers with germination out to sit in the sun for about 4-6 hours a day, mostly the flowers, calendula, marigold, bee balm, floss flower, belle flower, etc., and about 20 of the 120 tomato containers are sprouting too, so they're in the sun.

I check on them constantly, everything is still quite moist, lots of condensation.... but how hot is too hot?

don't the green leaves want sun? I read how some are only allowing a few hours and then dappled shade... what is the reason for that? to slow them down?

How will I know if I'm frying them?
