Hairy Vetch / Alfalfa

I've been reading alot about planting hairy vetch in your garden and then in the spring cut it but leave it lay as mulch. While reading this I saw that Hairy Vetch gets a tap root of 1 to 3 ft. I'm curious how hard is hairy vetch to get rid of once established. Also wondering if its long tap root would do any good for breaking up the hardpan caliche we have over here in the Southwest Desert.

I have 3 dogs so I worry about plants I don't know. Is Hairy Vetch safe if animals eat it? I've considered trying Alfalfa for this purpose and I know its safe but was wondering if anyone else had tried either of these and if they got any results. Comments are welcome please.
