Centaurea montana ( Mountain bluet ) deadheading?

I got this plant a few summers ago and really like it. I've started a few more off of the original. All are growing like mad and they have lots of flowers at first....I have been trying to deadhead the plant with little success so far. I look for new growth, like where new leaves are forming and cut back to there. It will then get little buds but most seem to dry up and die instead of producing flowers. What am I doing wrong?

My one plant has a lot of new shoots growing from the bottom and some dead stalks that I cut back, hoping the new stuff will grow and bloom but right now, they look HORRIBLE!
