The issue of plant nutrients in soils and the impact of soil composition on human nutrition is one that keeps coming up, especially when amending soils for trace elements is discussed. Below are links to two excellent publications that anyone with a serious interest should appreciate.

The first is from 1975. It remains a well regarded standard in the field, widely cited in more modern works, and is an excellent primer on the subject.

The second is a recent report, the first installment (Volume I) of a broader work as part of a joint between the International Plant Nutrition Institute and the International Fertilizer Industry Association.
