RJ--Seeding raised beds with worms..question

I am in the process of completing some raised beds (made with hay bales) in which I've piled in gobs of OM..chopped,leaves, grass, pinestraw--all layered in a lasagna style over cardboard and newspaper.

My neighbor owns a restaurant and will bring me her trimmings from veggies/fruit as well as her UCG. Since my beds are pretty deep (hay bale turned on its side so it is taller) I'm thinking I could bury the scraps and then seed those beds with worms to help give that process a boost.

What kind of worms are you using? The regular red wigglers or something else? I've just met someone who has 35 worm bins on his farm so I'm thinking I could get quite a few.
