Hardy water lilies from seed ... how to start?

Over the years, to no avail I've cross pollinated many of my hardy water lilies (only the ones I've read to be fertile) though, never would I get anything other than small mushy pods filled with immature seeds. Previous crosses done upon 'Texas Dawn' had not taken, though I now see one large pod about 2/3rds the size of a golf ball and still firm and green. When this ripens, how do I go about getting these seeds started? Would I start them immediately or keep them moist and wait till late winter?
