Why are herbs so hard to keep alive indoors?

I had a small rosemary plant that did beautifully until the last 2-3 weeks, all of a sudden it turned all crispy/shriveled, so that bit the dust (at least I got to enjoy an extra couple months from it). My sage plan did that pretty soon after I brought it in. My mint is doing okay after I put it out of reach of the dogs (you'd think they'd have minty-fresh breath after chomping on it, but no...), it's leggy but it's green and surviving well, just needs a good haircut before going back outside in spring.

Anyway, what the heck is the secret to keeping herbs alive indoors?
