I may not be much help at all here, because I've never tried to slow cook in my warming drawers. Typically I use it to either warm tortillas, or keep a casserole or plates warm while something else is cooking in the oven. I had a Thermador for 26 years, and it still worked fine, but during our kitchen freshen-up last year, I wanted a paneled front, so I found a Viking that fit. It functions no better, or worse than the Thermador. Interesting, you say the Viking goes to 250* I had no idea it got that hot! It really doesn't seem to be any warmer than my old Thermador, maybe it went to 250* as well? I've never checked with a thermometer... And no moisture problems with the paneled front so far, after almost a year, knock on wood ;)

I have a HGA120E50Z bosch 600m free standing gas cooker. The oven has temperature control range is from 170 to 270. My challenge is that when I select the recommended temperature when baking it will not be done within the allocated time. For instance, scones, the normal time 15/20 minutes at 220°C. But at that temperature it takes almost an hour to bake. So I have to do trial and error and take note of the temperature at which I would have success in baking socnes or muffins. This is not how it should be.

Edited to add: After viewing your video I notice that your oven is a newer model than mine, but the controls and panel are generally the same. Hopefully my advice below will still be of some value. I have a Kitchenaid double oven which came with a home I recently bought. It is junk. Here’s what I’ve found: 350* seems to be the temperature at which I have the most problems. I’ve found that if I consistently set the oven to ten degrees above my desired cooking temperature I can reasonably maintain the proper temperature. It’s as if the standard temperature settings, 350, 400, 425 etc are worn out (which I freely agree really makes no sense). If I set the oven to 360* it will reach 350 and hold that temperature for about an hour. After an hour I cancel and restart the oven at 360 again to maintain 350 for another hour. At this point some may be thinking “her oven is off by 10 degrees, what’s the big deal?” However, if I set the oven to 350, it will never, ever get above 300. I have similar problems with other standard temperature settings, but 350 has the widest temperature delta. So my advice, short of replacing it, (which I explored only to discover the oven is a somewhat non standard size and will require reworking my built in cabinet,) is to always use an oven thermometer and set the oven ten degrees above your desired temperature. We don’t know the user’s needs, other than that they need assistance adjusting the water temperature. So, perhaps a higher wall somewhere around the tub might be the answer. It wouldn’t have to be at the end, but it would have to be near a corner on the end opposite the window, for easy reach. But, where will the spout be? I don’t think I’ve seen one with the water spout below, only a showerhead above, although I suppose it could be to the side? I don’t think the spout can be above in this case, as it would splash. My shower control is on the wall adjacent to the showerhead wall, perhaps that might work here? Or the controls can be on the outside surface of the tub deck with the spout on the inside?
