Can someone clear this up for me???

This is my first time at seed starting and am pretty confused. I've read a ton of information on these boards, the internet and books. It seems that most people germinate the seeds in a variety of leftover containers containing vermiculite, perlite or any "soil-less" medium. And the next step is to transplant the seeds, once the two "true" leaves develop. Okay - that sounds easy enough but....

Why not use a seed starting mixture in a larger peat pot and let the plant grow undisturbed? Give it light, let it grow and when the weather warms up, throw the whole thing into the ground?

As this is the first year that I am starting seeds, I really have no idea what I am doing. But my common sense tells me to just start the seeds in a pot large enough to avoid all of the transplanting indoors. Yet the general consensus tells me otherwise. What am I missing???
