What, if anything, to do with old ram stew?

I posted this on the cooking forum and got responses from "Curry" to "feed it to the dog", wonder what GP cooks think.

It is home-butchered 5 year old ram, it was given to Joann by Meadow, the feed-store owner, who cooked some of it and said it wasn't bad at all, some was given to another person, they made curry out of it, so apparently it's edible.

Joann and I. always adventurous, will cook it and eat it, Ron will not even eat baby lamb, so this is definitely our project.

We were thinking of marinading in some strong red wine (Shiraz) with lots of garlic and bay-leaf for two or three days, and proceed from there: curry or Moroccan something or what? Serving with maybe bulgur.

It's still frozen, so we have time to play with the concepts.

Ideas?
