No-till advice for 7 acre meadow

Hi. We are planning to start acquiring animals this Spring. We have a large meadow which has been left fallow for many years. We have driven our tractor and cutter around the meadow to keep the weeds down but would like to now have sheep and goats do this work instead. (Plus we also hope to offer our meadow to a neighbor's cow part time.)

We've learned what the best pasture perennial mix is for our area. We have also been told it is best to disk our meadow to get rid of the weeds and then seed.

So here's what we'd like to hear advice about: We would prefer to not disk.

Can anyone recommend an approach for establishing a healthy seeded pasture in our meadow where we would not need to open up the soil?

I see in many of the no-till sites recommendations for what sound like established fields. But what do folks do when they are first opening land (getting rid of the big weeds?)
