Apples for Sydney Australia

Hi everyone

Been reading this forum for a while now - so much great information and nice people around here. Actually hoping someone will be able to help me with a few questions about some apple varieties I want to add to my garden as espaliers.

As far as I can tell we get around 600-700 hours of chill in Sydney. I live just down the road from where the granny smith apple is said to have originated. Might give a general idea of the climate we have.

I have a few trees which I added earlier this year and am looking at Calville Blanc D'Hiver (some of the descriptions I've heard about this sound amazing) and an early maybe Vista Bella, akane or winter banana.

Any thoughts? Am I just dreaming about the Calville Blanc D'Hiver?
