Placement of Trees in Orchard - Does it matter?

Ok, I drew a little picture of the orchard I have planned to build next spring. I want 8 trees total in rows and columns of 3, with a blank spot right in the middle for a nice picnic table or hammock or something :).

I want a pecan tree, an almond tree, two apple trees (one gala - one granny smith), two peach trees, one apricot tree, and one (either plum or pear) tree.

I have a couple of questions related to placement of the trees.

#1 Does it matter if I put the apple trees right next to each other? Or should I put them at opposite ends of the orchard? I understand the concept of pollination being better with two different varieties, I just don't know HOW close they ought to be.

#2 Should any of these trees NOT be placed next to each other? Will it affect taste? Pollination issues? Is it ok to put nut trees next to fruit trees?

#3 Looking at my little map, which trees would you put where? #1 and #4 peach trees? #6 Pecan tree?
