Orange friut of oriental persimmon not soft YET....should I pick?

I've been waiting and waiting for weeks now for a neighbor's tree-full of oriental persimmons to turn from green to brown, to (now) finally "pumpkin-orange".

But none of them are "soft".... by any stretch.

And we had a honest-a-goodness frost about a week of so ago.

Should I pick them NOW... and go ahead and do "the apple or banana in the plastic bag" thing?

The reason I say this is because there is coming up a forecasted FREEZE....(Or will freezing help too?)

I estimate there are about 30-40 nice tomato-sized persimmons on this tree; that I plan to make preserves with.

(The widow neighbor woman is giving them to me in exchange for my work in helping to clear her lot of debris strewn about from Ike's winds. Then the persimmon preserves will become the neighbors' Christmas presents! (:
