Paw Paw Storage and Flavor?

I received my order of P-Paws from integration acres today. Thanks to the poster of that lead on this forum lately. I opened them up and immediately saw some soft spots and dark mold beginning to form on them. They are also soft to the touch. So are probably quite ripe I'm thinking. But after opening one up, the flesh looked to still be holding up. My first question is should I refrigerate them? Just want to be sure they don't go 'banana' on me when I take them out of the refrige.

Also just had my first taste ever of one of these. Pretty darn good I must say. I only ate into one small one for now. It seemed to have a consistent agreeable soft custard-like texture to it. The flavor seemed to remind me of very mild banana with just a slight hint of tang to it. And something else that I couldn't quite put a handle on yet. I'll probably report back with more on that as I proceed along with some of the others. Am wondering how some of you other folks would describe their flavor?
