Stratification with dry seeds?

I tried saving fruit seeds in moist vermicullite in a plastic bag in the fridge. Unfortunately the stratification process worked so well the seeds started sprouting in the bag before the Spring really got started.

I want to avoid this problem, so I figure on of the best ways is to dry my seeds out like vegetable seeds. Not to mention that the seeds will just last longer and be able to handle better if they're dry. If I thoroghly dry out fruit-tree seeds like vegetable seeds, will they lose viability? Will the dried out seeds go through the startification/chilling process in the fridge if they're dry?
