Elberta Peaches soft

Well kids, I need help with my new peach tree. It is an Elberta Peach being grown in Grants Pass, Oregon in the beautiful Applegate Valley. We purchased a bareroot about 1.5 years ago and it is already bearing fruit. Leaf curl is a problem here, but I just pick it off and put the leaves in the burn barrel. My actual problem is with the peaches themselves. The first few we picked were absolutely "to live for", but the last half of the crop became soft and "pithy" as my grandma used to call them. Not acceptable at all. What have we done wrong. Were they picked to late. should I have picked them all at the same time and just allowed then to ripen in a cool place. Please help if you have an answer for me. Thanks so much.
