Three apples to complete my apple orchard

Before I make a final decision and place my order, I wanted to pass this before the forum one more time. Of the five on my short list I'm going to order three. The only one I have actually tasted is Gravenstein, which did not impress me as an eating apple but knocked my socks off in a pie. My taste is for wine-y apples, sweet but complex. Disease resistance is a big plus, as are a variety of tastes and ripening times. Long storage is also good, and I do realize that Gravenstein does not meet this particular criterion.

I live in the San Jose area of California. While I am interested in general information ("No, no, don't plant that apple!"), I am also interested in knowing what might specifically thrive or fail here. Here is the short list.
