A few questions on what 'to' cold and 'to' humid mean...

Hey everyone!! I am really new at the fruit thang and I am having a lot of trouble finding fact based info rather then relative info like "to humid".

My fiancee and I are moving out of the big city to a small town (Masset, BC) on the Queen Charlotte Islands. This is quite far north, but is consider temperate because of ocean currents. The weather information can be found here - http://www.theweathernetwork.com/statistics/C01967/cabc0182

So if I am understanding what I've been reading correctly most apple, pear, and cherry trees should do fine here. My main concern is at a very stable 80% humidity is it going to be "too humid"? For that matter any opinion on"too cold" etc...? If any has any thoughts on things to try, things to avoid etc that would be great!

To put this area in context, blueberry, raspberry, huckleberry, salal, elderberry, and crab apple all grow wild and like weeds in this area...also I am told Potatoes love it. :)
