I thought red was just the most mature? Doesn't it go something like Green to yellow to red or something? I don't think it goes from Green to Red instantly.

Anyways, there are different varieties that turn different colors other than Red as the mature color.

I grow a variety called "Sweet Banana" which go through an orange coloring before going red. It's a very tasty variety which produce well and usually are 7-8 inches long.

There are many bells whose ripe color is yellow or orange. There are a couple of bells whose ripe color is green Staysgreen and Permagreen comes to mind. The whites and purples are red when ripe. Chocolates actually turn red but keep the green so the result is a reddish brown. There may be sone sweet non-bells that are yellow or orange when ripe but I don't know any.

I prefer Cubannels- sold in markets as "Italian Frying Peppers". I have had no trouble growing them as a new gardener. I have one plant that looks like a tree with over a dozen peppers on it! They stay green and are very versatile in the kitchen!

All the cubanels actually are green to reds.

Hi everyone, thanks for the feedback. I'll look at http://www.tomatogrowers.com/ since that sounds familiar and may be the site I was thinking of. Yeah, many peppers turn to red when they are fully mature, but this particular site stated that theirs never turned red. So their white peppers stayed white, chocolate stayed brown, yellow stayed yellow and so on on full maturity. I love that I would never have to worry about them turning any other color than what I was looking for. I have chocolate beauty planted now, but even they turn red. And the purple beauty I have planted now are about too bear fruit, so I'm keeping my fingers crossed with them. Thanks again!

Interesting, I know a lot of pepper varieties, but never encountered any that meet your description. All the yellow when ripe varieties start out green. The colored peppers purples whites start out green but quickly take on on their intermediate color than ripen to red.

Why not just harvest before they have a chance to turn?

I grew a green variety that doesn't turn when ripe. But, as natal said, just harvest before they turn. The advantage to liking them green is that you get to harvest earlier. I just clipped 3 scrumptious green ones about an hour ago, so now the plant can put energy into making more for me.

Sweet Banana also turns red when ripe. It just holds for awhile longer than some.
