Apple / crab apple pruning

Hi! I have a very lush mostly crap apple tree in my front yard. It has five trunks, four crab apple, one apple, and a big main stump. From what I can tell and from some reading most of the growth is from the root stock and one small trunk is from the graft. The apple trunk has apples but is bending quite far over to get some light. This is our third summer in the house and we had apples last summer but I don't remember any the first summer.

Is it too late to cut the crab apple portions back to allow more light to the apple portion? Do I need to keep the crab apple portion of the tree or can I remove all the trunks but the apple? The crab apple is very pretty in spring but I like fruit better.

I have pictures, I'm just trying to figure out how to upload them.
