cover crop

If you plant a winter cover crop of winter rye (I'm a new farmer and I'm organic,) can you till 24" strips to plant your tomatoes, etc. and leave the rye in between (just cut it with a mower) in 24" strips? This would help with erosion and make the fields look great. But I'm thinking there's a reason I don't see this on farms. I guess, over the growing season, the rye would spread to under your crops? Would the rye use up all the nutrients the crops need? Thanks!
