I'd do it. You have months for the graft to become established. You just have to be sure that the scions are truly dormant. I just grafted my pear last week during bloom.

If you have trouble finding dormant scions now see if you can get a bud stick in early August and try budding. The goal is to have the bud heal over this season for forcing in the spring.

I can offer some refridgerated scions from Tennosui pears, which is an Asian hybrid with Tennessee and Hosui parents. I do not know how they will do with your cold. The fruit is very Asian looking and tasting, but without big fireblight problems or needing cross pollination. As long as your trees are actively growing either now or later, bark grafts and bud grafts can work.I did some pear bark grafts last August when a heavily-pruned mature tree started actively growing, but each scion got loose,thin, white plastic sun shields to deal with the 90+ degrees until new leaves got a good start.Regarding paw paws, I would like to know which varieties you could mail here in 9 months or so. I am a collector.

I just checked the dormant cuttings I had left, and I still had some Asian Niitaka but for the most part the buds seem just at a beginning to break stage, so I don't think I would chance them, but if you do you are welcome to them. If have interest in Europeans I probably have some Magness and Seckel as well as apples from dormant wood taken in Feb. That might still have a chance. I had some Korean Giant and Shinko cuttings as well but I think when I finished up with grafting this year I neglected to label them correctly, at least on initial glance I did not find any bundles labeled as such, but if you don't find any prior to next season I could share those as well
