Pepper plants producing only 1-2 big peppers

I am trying to grow 3 varieties of peppers: Gypsy, Healthy, and Quadro di Asti Gallo (yellow bell pepper).

These plants are producing 1-2 peppers at the most and the rest of the blossoms aren't doing anything.

I don't want to pick the peppers yet because they are not ripe. The Gypsys are supposed to be red and they are still a pale yellow, the Quadro is still green and has not turned yellow shade it is supposed to be.

Are these big peppers sucking the life out of the plant so that the other blossoms can't bloom? But, if I pick the peppers off now, they won't be ripe for eating, so I don't know what to do.

Has anyone else experienced this?
