Preparing for 20+ fruit trees - tips - ground cover planting?

I was planning on starting 20+ fruit trees. Apple, pear and peach. On rootstock for my area. I have been looking for a place to purchase in SW Michigan.

The area I am going to plant is old horse pasture. I mowed down the grass all last year. So I have turf and mostly clay type soil.

I have a tractor with a 2 point plow. I was planning on plowing the entire area over.

Planting the trees in rows then mulching around them.

I have been reading some organic orchard books and am getting mixed methods for ground cover around the trees.

Anyone have anything particular they plant in my area? Clover? Grass?
