best practices for hand pollination - can't find good info

i've searched the web and forums, and can't find the info i'm looking for.

for my fruit trees (apple, pear, plum, peach, cherry, etc), how long do flowers stay open? how many days until anthers are ready to give pollen? how many days until stigma is ready to receive pollen? i've read to look for when pollen appears on brush, and stigma is sticky, but i don't have that kind of eyesight to see these things.

how many anthers of one variety should i collect, before depositing on second variety, and how many stigma should i apply to after collecting from "x" anthers.

should i try the same flowers day after day, every 2 days, once only?

by the way, my father and i have similar trees. he hand pollinated his last year, and got great yields. i didn't do mine, and got practically nothing. so this year i want to do whatever it takes!
