OP bell pepper seed collection?

I've saved many bean and tomato seeds, but this is the first year I'm planning to save OP bell pepper seeds.

My Jupiter bell pepper plants are producing like crazy, some nice big green peppers and a bunch of smaller immature ones so far.

When's the best time to collect the seeds to plant next year? I know the fruit must ripen and turn color for the seeds to be mature enough to germinate and produce plants, so WHEN do you let the fruits mature? The first ones that are vigorous, large, and healthy? Or later ones after you've picked what you want of the green ones?

If I let the first ones mature, will that stop the plant's productive life? I don't know if the same principle applies to bell peppers as several other plants -- if you don't keep the fruits picked, the plant will stop producing.

If you save bell pepper seeds, which ones do you save?
