Prune Correctly for the 1st time this year; questions

I have about 60 apple trees, 45 planted in 2009 and 15 last year. all on semi-D stock

Sandy soil, level or mildly sloped, very good drainage, trees mulched with wood chips and watered if needed.

Had only modest growth in 2 years. From other posts I've learned my trees are probably nitrogen deficient which I will correct this spring with an application of urea.

Have done little pruning to date which I've learned is wrong. Ready to prune now but not sure if I should prune while still dormant or wait till tress are again growing.

will be pruning for open center.

looking for advice on timing and any other info or suggestions I might need.
