How many plants for 2?

I've been vege gardening for about 6 yrs now.

I do have a freezer and a food saver and a dehydrator.

I usually plant 1-2 squash plants with leftovers, 1 cuke, 7-8 tomato plants, right now 9 green bean plants (but plan alot more for later), 6 swiss chard (I'm feeding the chickens with it right now!), 4 arugula, 6 pack mesclun salad mix, 6 pack romain lettuce, new to the garden are 6 brussel sprout plants (don't know much about them!)and a couple of peppers.

I have a tomato, peppers and egg plant in the greenhouse (new)I've heard these are perrenial in the GH!

I'm looking at about 8x8 raised garden.

I'm going to double the size of my raised garden by next year including an asparagus bed and a shade bed for lettuces etc.

I don't know how to post pics, so you just have to imagine!

I planted all of my potatoes in the ground. I have four different types of broccoli, purple cauliflower, and Brussels sprouts hardening off. I have seedlings growing for canteloupe and watermelon. I have five tomato plants growing. That's an experiment. I want to see if I can grow paste tomatoes. I also want to plant some carrots, maybe interplant them somewhere.

And I have 110 garlic plants growing, many of them as tall as my hip.

This is my fourth vegetable garden. And it seems I always plant way too much for my wife an I to eat by ourselves. Good thing giving vegies away is so much fun.

This year I have: 30 tomatoes, over 60 peppers some hot some not, a couple eggplants, 40 feet of green beans, a 40 foot double row of onions, 9 cabbage, 2 summer squash and 2 zukes, a bunch of winter squash and pumpkins, the perennial crop of asparagus and rhubarb, and a few different herbs and flowers mixed in.

Most of the tomatoes get turned into salsa or tomato sauce, and then canned. we still have several jars of both, but I don't think they will last us through harvest time. The onions seem to last us most of the winter in the pantry. All the excess is given away to friends and family... untill they lock the doors and turn off the lights, that is.

Oh, I forgot the greens are edible! I'll probably just eat the pods, but may give the greens a taste at some point. When would be the best time to harvest the leaves? And if harvested, would that prevent the plants from being able to set pods? I can eat a lot of favas in a sitting. It's kind of embarrassing how much I love them. This summer, several of my dinners consisted of nothing but favas that were blanched, then peeled, and sauteed in a little garlic and butter. Of course, those came from the farmer's market, so being able to eat some that are homegrown will be much more fun. Would it be ok to plant them every 2 inches or so, or would that be too close?

Welcome to Arizona gardening. Its not required but recommended that your tomatoes either get afternoon shade or be protected from the afternoon sun with 50% shade cloth. I'm not sure how many bean plants you will need. I have not been as successful with them as some other members have been. I started a thread about tomatoes in the tomato forum that may be of help to you. The link is below. Peppers grow well here but do better with afternoon shade. From time to time a farmer will stop by and say they grow in Arizona without shade or shade cloth. Farming is different than vegetable gardening though. I drive by some farms on occasion that are not far from my home. Each time I do the temps drop as much as 5-10 degrees, sometimes more at night. A field full of peppers or tomatoes is evaporating massive amounts of water over a large area which drops the temperature and increases relative humidity. In my garden I can have 8 percent relative humidity at 110 degrees with a 15 mile an hour wind speed. At the same time in the farmers field its 99 degrees with 50 percent humidity with a 15 mile an hour wind. That dryer wind in the home garden in full afternoon sun can suck the life out of a plant. My main crops are squash, tomatoes, peppers, cucumbers and a few melons during the summer. If you click on the photo it will take you to my photobucket page where you can see more pictures. How many pepper plants? How many tomato plants?

last year I did around 500 tomato plants and around 450 pepper plants. This was for 2 farmers markets and a farm store. I will do around the same this year as I am dropping one farmers market and replacing it with a CSA. I am also counting on the peppers doing a lot better this year. Last year 95% of the plants did not get ripe fruit on them before the first frosts. they were about 5 weeks late in setting fruit and I have no idea why. The 100 peppers in the hoop house produced early as they were supposed to but over 75% got sunscald and than bacterial rot. I grow mainly sweet peppers with a mix of hybrid green to red bells (by far the best seller) along with green to orange, green to yellow and purple to red bells. i also do some funky heirlooms for those who like an adventure in food because the taste is generally better than the hybrids. I also do a small amount (less than 25 total) of hot peppers, mainly jalapenos and cayennes as those sell the best for me. Last year I did 27 different types of tomatoes, mainly heirlooms. Red maters are the mainstay but I also do purple, black, white, green, yellow, orange, etc.. I also do around 50 cherry tomato plants (do not go hog wild on cherries as they take a lot longer to harvest than the big maters)

I garden in plastic tubs, pots and planters: Mel's spacing works for me (with adaptations to the extended growing season hereabouts).

Check with your state's Extension Service. Each county should have it's own Cooperative Extension Office which provides free publications and information for the asking. They will have valuable vegetable/gardening tables available specifically for your area determined by universities and horticultural research scientists who have collected data from growing those crops in your state. Your tax dollars are already paying for this service so you may as well get some use out of it.
