Which veggies taste bad after bolting?

Bolting is the bane of leafy greens, of course, because once a plant starts to bolt, it stops putting out new leaves and puts its energy into flowering and seeding.

Lettuce tastes terrible as soon as it starts to bolt. However, I haven't found that many other plants lose their flavor, and I've harvested some for weeks, flower stalks and all. Arugula flowers even make a tasty addition to salads.

So what plants other than lettuce really do become worse-tasting, rather than simply less productive, after they bolt?

I'd start the list with parsley, which becomes somewhat more bitter and coarser-tasting, though it's still edible.
