Concrete or stone patio?

We're going to redo our backyard by getting rid of the lawn. We have an 8'x20' area that we want to use as a patio, and the rest of the area for raised beds to grow vegetables and flowers in and brick/stone walkways between the beds.

For the patio we'd like to use a material that would block water from seeping as much as possible as we have a bit of trouble already with water getting into the crawl space under the house. In addition, in the patio we'd like to have a pergola draped with grape vines.

Now I have some questions:

- If we used concrete or stamped concrete, will it affect the growth of the grapes since lime might get into the adjoining soil from the patio?

- As for stone, we're considering flagstone or slate. Maybe even brick (yes, technically it's not a stone). Would they keep out water as well as concrete? (We'd use mortar between the stones.)

- We live in Fremont, CA. Is it a good place to grow grapes, or should we consider some other vines?

Thanks in advance.
