Suggestions Needed for Privacy Shrub - zone 9

We are relandscaping our backyard and had some of our plants/shrubs removed yesterday. We decided to remove one tree that was planted right next to our fence and crowded our birch trees. We also had to remove one birch tree that had died. Another one was lopped off at the top years ago which we plan to remove once new plantings mature, but for now we think we need something there. The birch trees have been underwatered since our remodel and were also crowded by this other tree. It is our hope that they will fluorish now that there is more space around. We are thinking of planting another birch three to replace the one that died and as it matures eventually take out the stunted one.

In the process of removing the one tree we did loose some of our privacy from a two story house behind. We are discussing options to plant something else in the back corner to replace it--at the same time not crowd the birch grove. We are thinking of a large shrub--perhaps even transplanting a potato brush we have elsewhere on the property.

I would appreciate any feedback in this plan as well as other suggestions to maintain privacy without crowding the birch grove.
