I would say I tend to be quite attracted to colorful produce, why else would I grow the multi-colored chard when almost no one in my family will eat it? lol. It sure looks awesome in the garden though.
I'm also a huge fan of multi-colored tomato salads. yellow, red, and black cherry tomatoes, all cut in half and tossed together with mozzarella and some balsamic vinaigrette... best side dish ever. or sometimes a meal to itself >.> <.>

Me, too. Very few of the things I grow are "normal" LOL! (Although I do have to admit that blue potatoes turn me off.)

Purple pole beans! The dark purple flowers are beautiful and the kids love watching the purple beans turn green, as you cook them. They taste really good, too :)

I really like the "different" colors and will try almost any new color I see once. But if it doesn't perform well and taste good, I don't grow it again.

I sort of look at vegetable and herb plants as edible ornamentals. I like all the different forms and colors, and am happy to have flowers in the same beds.

I'm not a color person but I think I might give it a try. I tend to stick to vegetables which I use frequently, is easy to grow and/or is rare in the grocery markets.

I might try a bed with Okra, purple basil and purple pole beans and see how that looks Now you have me intrigued.

I love growing things with colors that differ from the norm. Like rainbow carrots, purple bush beans, golden beets, purple kohlrabi, purple pak choi, and a bunch of different color peppers.

Very important to me. That's where creativity comes into the process and turns it into an art, not to mention how much more inviting is a plate of food with many colors on it. This year I have/am growing:

purple mustard
purple/aqua kale
red, green, yellow lettuces
grey blue collards
red, green, yellow, orange, red/green striped, and purple tomatoes
purple pole beans are truly our favorite (taste too)
white and burgundy lima beans
purple/pink speckled beans
purple cowpeas
orange, green, yellow peppers
red/violet eggplant
yellow, green, and white squash

I'll have to admit that no, colour isn't very important to me. Flavour is utmost and second is storage quality. Our garden's first purpose is to fill the freezer and pantry for our ridiculously long winters.

That said, we have a five-year-old and a nearly two-year-old this spring, so I'm delving into the unusual for their entertainment a bit this year. We've always grown purple snap beans, but this season we're adding: white pumpkins; white, yellow and red carrots; purple, orange and green cauliflowers; and dragon's tongue beans. The girls are already intregued just by the packets, lol!

I love color in my veggies (that includes the "normal" colors)! I have been known to sigh in disappointment as my lovely purple beans turned to green upon cooking. Still, I would say I try a new cultivar based on color almost as often as based on reviews of flavor. In the long run, how much of something I grow usually depends on things like flavor and storage ability. Happily a number of the different colored veggies have unique flavors that I enjoy, especially brassicas that tend towards the red/purple. Recently I tried the hakurei white turnip that jrslick mentioned last year and that was as good as promised!

The more unusual the color, the better I seem to like it. It's just fun to grow things people aren't expecting.

Sorry off topic, but wanted to answer Nygardener...

We can get frosts into late May and very early June. Fall frosts can come in late August, but we usually cover with blankets and can delay the final clearout of the garden until late September.

This year, we've had no measurable rain except for 2/10ths a couple of weeks ago, so we've been able to get into our garden a LOT sooner than usual. This coming weekend - Victoria Day long weekend - is the traditional planting out weekend for Central Saskatchewan. My MIL put her peas in two weeks ago. I put ours in on Sunday. Peppers shouldn't go out until the first or second week of June, depending on the year.

I do want to just mention that some colors are not as unusual as we tend to think of them. Just because the eggplants in the grocery stores are all dark purple and exactly the same size and shape doesn't mean they define the "right" color for eggplant. The varieties in the store are the descendants of the ones best suited to truck and plane shipping and mass agriculture, so they've become the iconic images in the minds of those of us who utilize grocery stores.

Most of the so-called unusual colors are simply heirlooms; few have been bred recently. But I suspect plant breeders are currently actively working on more -- it's a hot trend in gardening. Just as some heirlooms are superior while others are forgotten for good reason, I would guess any new colored varieties will have to stand on their own two roots to pass the test of time.

I love the colors, especially purples and pinks. I decided to try amaranth this year because it's so pretty and can be a warm season green. Love black and purple tomatoes, also green when ripe ones. Not so into gold or yellow veggies.
My favorite sauerkraut is made with purple cabbage and apples, along with red onions. It turns a lovely fuschia color.
