Why can't I design with plants?

I am just an amateur, but have designed several of my own gardens. With some effort I can visualize the hardscape. I can figure out where the paths should go, how wide they should be, what material should be used etc. I could even visualize a waterfall and pond before building it, even though I have never built one before.

But when it comes to plants I can't organize them on paper. I just plant, and move my mistakes. That seems quite common with amateurs.

A few weeks ago it hit me. When it comes to plants, I tend to try new things all the time. I am really a plant collector more than designer. This means I don't know how the plants will grow, or what they will look like. I am beginning to think that has a lot to do with why I can design the plants.

Hardscape on the other hand is better understood. I understand what a flag stone pathway will look like.
