sweet potatoes questions

I want to grow some sweet potatoes this year. I tried last year but only got one edible sized tuber... I saved it to grow slips from this year. My Red Wine Velvet tuber has about 7 good slips on it right now.
The bed I plan on putting these slips in is a 4x8 raised bed. It is 12 inches tall and is filled with topsoil, compost, composted horse manure and some other bagged stuff. Can I plant all 7 slips into the bed or will that crowd the plants too much once they start growing? I was going to put fencing around the bed for the vines to grow up so they don't get too out of hand. I was going to order some other varieties from Sandhill Preservation but will probably need another bed to accommodate them.
Also, any recommendations for varieties to get? I'm not big on stringy potatoes, as I've heard some of the white varieties described as. I've never grown any sweet besides the ones last year but I didn't get to eat any of them...
