Root crop puzzle

We grow very nice carrots and potatoes but are lucky to get beets more than an inch in diameter, radishes often don't bulb, and turnips the last time we tried them were nothing but greens. We have sandy soil. The last soil test showed sufficient potassium and phosphorus levels. I would give up growing beets and turnips but the local summer resort chef wants them. Baby turnips are a gourmet treat apparently.

Does the answer to this seeming puzzle jump out at anybody here?
