Converting St. Augustine Grass into a Veggie Garden

Hello Garden Web and thank you so much for all the gardening wisdom. I have learned so much over the years and only now do I write my first post. Help that I can't find already answered in the forums (if it exists out there please give me a link and sorry for wasting your time)

So....I have a 300 Sft. area of St. Augustine grass that I want to convert to a veggie garden. Well it is St. Augustine and crab grass and Bermuda grass and other weeds.

Anyhow should I till it under and cover it with compost/new soil? Or carve it out with a sod cutter and put down new soil and just compost the old sod? Or should I cover it in black plastic until it is truly dead, till it and add in compost? Or none of the above.

I am about 3-4 weeks out from wanting to plant seeds or transplants and don't want to mess with Round-up or other chemical treatments.

Any advice would be appreciated. Even if it is a link to a good tutorial. Again thanks so much for helping this noobie gardener over the years.
